Applesauce Carrot Cake

Carrot Cake Recipe Ingredients:

* 3/4 cup butter or margarine
* 1 cup granulated sugar
* 1 1/2 cups firmly packed dark brown sugar
* 2 eggs
* 2 1/4 cups applesauce
* 3/4 cups shredded raw carrots
* 3 cups unsifted all-purpose flour
* 1 1/2 cups unsifted whole wheat flour
* 1 tablespoon baking soda
* 1 1/2 teaspoons cinnamon
* 1 1/2 teaspoons nutmeg
* 1 1/2 teaspoons allspice
* 1 1/2 cups coarsely chopped walnuts or pecans
* 1 1/2 cups raisins

Carrot Cake Recipe Instructions :
In a large mixing bowl, cream butter until light and fluffy. Gradually beat in granulated and brown sugars. Beat in eggs. Measure all-purpose and whole wheat flour into a bowl; add baking soda and spices and stir to blend. Add dry ingredients to creamed mixture alternately with applesauce and carrots. Fold in walnuts and raisins. Spoon batter into to a greased and floured bundt cake pan. Bake in a preheated 350° oven for 1 hour and 20 minutes to 1 hour and 30 minutes. Cool in pan for 5 minutes; tap to loosen and unmold on a wire rack to cool completely. Sprinkle with confectioners sugar or drizzle with a glaze before serving...and the Carrot Cake recipe is ready..enjoy it !

Ingredients:

* 1 1/2 cups sugar
* 1 1/2 cups vegetable oil
* 3 eggs
* 2 teaspoons vanilla
* 2 cups sifted all-purpose flour
* 2 teaspoons cinnamon
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 1 teaspoon salt
* 2 cups shredded carrots
* 1 cup chopped apples
* 1 cup golden raisins
* 1 cup chopped pecans

Pecan Cream Cheese Frosting:
* 2 (3oz) pkgs cream cheese, softened
* 1 tablespoon milk
* 2 teaspoons vanilla
* dash salt
* 1 box (1lb) confectioners' sugar -- sifted
* 1/2 cup chopped pecans

INSTRUCTIONS:
Combine first 4 ingredients in a large bowl; blend well. Sift together the dry ingredients; add to the first mixture and mix well. Stir in remaining ingredients. Pour into 2 greased and wax paper lined 9-inch cake pans. Bake at 350° 35 to 45 minutes until center of cake is firm to touch. Cool in pans 10 minutes. Remove from pans and finish cooling on cake racks. Frost with Pecan Cream Cheese Frosting.

Frosting: In a medium bowl blend first 4 ingredients thoroughly. Gradually beat in sifted sugar until frosting is smooth and of spreading consistency. Fold in pecans. The carrot cake recipe with apple is ready...enjoy it !

Ingredients:

* 4 eggs
* 2 cups sugar
* 1 1/2 cups vegetable oil
* 2 cups grated carrots
* 2 teaspoons vanilla
* 3 cups flour
* 2 teaspoons baking powder
* 2 teaspoons baking soda
* 2 teaspoons ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/8 teaspoon ground cloves
* 1/2 teaspoon salt
* 3/4 cup chopped nuts
* 3/4 cup chopped dates or raisins

INSTRUCTIONS:
Beat together eggs, sugar, oil, grated carrots and vanilla. Sift together the flour, baking soda, baking powder, salt, and spices; gradually add to carrot mixture and beat to blend well. Fold in chopped nuts and dates or raisins.

Bake in a greased 10-inch tube pan at 375° for about 55 to 65 minutes. A wooden pick inserted in center should come out clean. Frost with cream cheese frosting or glaze as desired. The carrot cake recipe is ready ...enjoy the cake ! Nice !

Ingredients:

* 1 1/2 cups all-purpose flour
* 3/4 cup granulated sugar
* 3/4 cup vegetable oil
* 2 eggs
* 1 1/2 teaspoons baking powder
* 1 1/2 teaspoons ground cinnamon
* 1 teaspoon salt
* 2 teaspoons vanilla extract
* 1 cup finely grated carrots
* 3/4 cup finely chopped pecans
* whipped cream or whipped topping for garnish, or frost with cream cheese frosting

INSTRUCTIONS
Preheat oven to 300°. Grease and flour a 9-inch square baking pan. In a large mixing bowl with electric mixer at medium speed, beat flour, sugar, oil, eggs, baking powder, cinnamon, salt, and vanilla until smooth and well blended. With a wooden spoon, stir in grated carrots and pecans. Pour batter into prepared pan. Bake for 45 to 50 minutes, until cake pulls away from sides of pan. Cool and cut into squares. The carrot cake recipe is ready to serve with whipped cream or whipped topping...hmmm..nice ! Enjoy the cake !

* 2 cups all-purpose flour
* 2 cups granulated sugar
* 1/2 teaspoon salt
* 1 teaspoon baking soda

* 1/2 teaspoon ground nutmeg
* 3 eggs
* 1 1/2 cups vegetable oil
* 2 cups finely grated carrots (about 3 to 4 medium carrots)
* 2 teaspoons vanilla extract
* 1 can (8 ounces) well drained crushed pineapple
* 1 cup shredded coconut
* 1 cup chopped walnuts or pecans, divided

INSTRUCTIONS:
In a mixing bowl, combine dry ingredients; stir to blend. Add eggs, oil, shredded carrots, and vanilla; beat until well blended. Stir in pineapple, coconut, and 1/2 cup of the walnuts. Pour into a greased and floured 13x9x2-inch baking pan. Bake at 350° for 50 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Place cake in pan on a rack to cool. Frost the cooled cake with cream cheese frosting and sprinkle with remaining chopped nuts, pressing into the frosting very lightly.
